If there is one chef who has written the preservation of French cuisine into his own DNA, it is Jean-François Piège. “At MIMOSA, you will find the cuisine I love to eat, the one that makes the sun shine and the joy of living sparkle with each bite, like an endless summer! With the cuisine defined, all that remained was to give MIMOSA its identity. For Jean-François Piège, the choice was obvious. “Very quickly, the idea of a sunny table, celebrating Mediterranean cuisine (a style that I love but had not yet had the opportunity to practice) came to me,” he explains. This celebrated chef, who first trained at the Louis XV in Monaco and the Chabichou in Saint-Tropez, considers the southern sun to be an essential part of his identity.
